blueberry streusel muffins

This is a super easy, super delicious muffin recipe I got from my grandma. It’s become a standby when I need something quick and delicious for a brunch party.

blueberry streusel muffins

muffins:
1/2 c flour, sifted
2 t baking powder
1/4 t salt
4 T butter
1/2 c sugar
1 egg
1 t vanilla
1/2 c milk
1 c blueberries, washed and stemmed

topping:
2 T butter
2 T brown sugar
1/4 t cinnamon
1/4 c chopped walnuts

Preheat oven to 400.

Sift flour, baking powder, and salt.
Cream 4 T butter and sugar until fluffy; beat in egg and vanilla.
Stir in flour mixture alternately with milk.
Fold in blueberries.
Spoon into baking cups or muffin tin, half full.

Melt 2 T butter in a small saucepan, then remove from heat.
Stir in brown sugar, cinnamon, and nuts.

Sprinkle topping over each muffin and bake for 20-25 minutes.
Cool on wire rack.

Makes one dozen muffins.
