I’m reminiscing about Thanksgivings past, and I wanted to share with you two traditional Cavanaugh-family Thanksgiving casseroles: corn casserole and sweet potato casserole. To me, it just isn’t Thanksgiving without them.
I’m not sure how far back this one goes, but it was at every Thanksgiving and family reunion of my childhood. It was my grandpa Johnny’s favorite, so we made it for other holiday gatherings like Memorial Day and 4th of July, too. It is incredibly easy, and it cooks up like cornbread with a little extra corn.
Corn Casserole, aka Corn Delight
1 can creamstyle corn
1 can whole kernel corn, drained
1 stick oleo, melted
8 oz. sour cream
1 8.5 oz. box Jiffy corn muffin mix
Mix all ingredients, one at a time, in a 1 1/2 quart casserole.
Bake 35 to 45 minutes at 350 degrees.
